I’ve been meaning to post our favourite paleo muffin recipe for a long time…..In fact I am sure I have promised it more than a few times without delivering. It’s finally here! Chocolate Banana flavour!  In addition to being grain and dairy free they are also nut free so are perfect to add to school lunch and snack boxes. Sweetened only with bananas and dates and a little honey, they are not overly sweet and are rich in vitamins and minerals and fibre and deliciousness!

I use my thermomix but a food processor, mixer or even good blender would work equally well.

Dry Ingredients
40g raw cacao powder
50g arrowroot flour
50g coconut flour
1.5tsp baking powder

Wet Ingredients
300g very ripe bananas
100g medjool dates
90g melted coconut oil
4 eggs
1 tsp vanilla essence
40g raw honey

1. Pre-heat oven to 150c (fan)
2. In a bowl mix all dry ingredients together
3. In a separate bowl or food processor/thermomix blend all wet ingredients until they are smooth
4. Stir dry ingredients into wet ingredients and mix until very well combined
5. Pour into muffin cases / cupcake liners in a muffin tray
6. Bake at 150c for 30 mins

As my middle son is currently reacting to eggs we have also trialled an egg free version of this using applesauce. Grain and dairy and egg free is definitely a challenge so the egg free version is dense. It is not as fluffy as this original recipe. But it is moist and delicious. And a little ‘fudgey’ and most importantly it got approval from the kids! I’m going to make it another couple of times to check I’ve got the substitutions as perfect as I can before posting.
